I'm sure quite a few of you have heard of the weight watcher pumpkin cookies. It's really simple. 1 15 oz. can of pumpkin and 1 box of spice cake mix. Mix together, drop by spoonfuls on a cookie sheet, and bake @ 350 degrees for 10-12 minutes. The good news is they are only 1 point per cookie. However, I like to add chocolate chips to them, which makes them not as healthy, but then you have easy pumpkin chocolate chip cookies. Our cooking group this month was "pumpkin" themed. I figured everyone would bring cookies, so I decided to throw this recipe into a bundt pan and make a cake out of it. I added 1/2 cup of water to make it more cake-like, but I think I might need to add even more to make it fluffier because it was still a little too heavy for my taste. It was still delicious. I added my version of "Nothing Bundt Cakes" cream cheese frosting, added some flowers to make it look fancy like theirs, and there you go!
Here's the recipe for the frosting:
1 8 oz pkg cream cheese, softened
1/4 cup butter (1/2 cube), softened
1 tsp vanilla extract
1 1/2-2 cups powdered sugar
Cream together cream cheese and butter. Beat in vanilla. Gradually add powdered sugar until desired consistency.
