Avocados for Breakfast

I've been trying to eat healthier lately. One thing I've changed is I don't use mayo on my deli sandwiches. Instead I load up on the vegetables and add some avocado.
I don't even miss the mayo. The avocado is just the right ingredient to keep my sandwich from tasting dry.
Plus, it's yummy and healthy.

So my curiosity was piqued when I saw this recipe for Avocado Toast popping up around blogland.
Avocados From Mexico IZEA Blogger Outreach - Wake up a Winner.doc (Read-Only)

* 1 fully ripened avocado from Mexico, halved, pitted and peeled
* Salt
* Ground black pepper
* 2 large slices bread, toasted
* Optional: 2 slices bacon, cooked and halved or 2 tablespoons chopped tomato

Preparation: In a bowl, coarsely mash avocado with a fork; season with salt and pepper to taste. Divide avocado onto toast and spread to cover; cut each slice in half.

If desired, tuck a piece of bacon into avocado on each toast half or slice tomato over top and serve.

What do you think? Have any of you tried this yet? I don't think I've ever thought to have avocados for breakfast unless it's in a breakfast burrito or on huevos rancheros.

  1. I do this all the time - I am lucky to have an avocado tree in my backyard and "avocado sandwiches" are one of my favorite lunches, I don't add bacon or pepper, just a but of salt - soooo good!

  2. That's too much work....just put the avocado directly on the toast and mash a little with a fork (one less bowl to wash!)! Avocado is especially good on sourdough. I use garlic salt (no pepper)...lawry's blend is the best!

  3. One of my favorites! I just mash it on the toast too. :) I also like to add a poached egg. Yummy!

  4. I eat this a lot too, it is sooo yummy. I also try humus on my sandwhiches instead of mayo.
